Today's Recipe - Easy fluffy vanilla sponge cake

This is a very easy cake that everyone loves. It melts in your mouth and is good for about 7-10 days after baked.

6 large eggs (room temperature)

1 cup sugar

½ cup vegetable oil

¾ cup fresh squeezed orange juice

2 tbsp fresh squeezed lemon juice

2 cups all purpose flour

2½ tsp baking powder


  1. Preheat oven to 320 degrees F (170 degrees C)

  2. In a clean mixer bowl, with the whisk attachment, whip the egg whites and sugar until foamy (about 5 minutes).

  3. Gradually add the egg yolks, oil, orange juice and lemon juice until blended.

  4. Next, add the flour and baking powder. Whisk only until flour is combined (Do not over mix the batter or it will deflate).

  5. Pour the batter into a pan greased or lined with parchment paper, smoothing the top.

  6. Bake for 40 minutes until a toothpick inserted in the center comes out clean.
